Tomorrow's laptop lunchbox

It's been a couple of weeks since I've used my laptop lunchbox - people at work even commented on it! So I decided to pull it back out of the cupboard for tomorrow's lunch. We've been overrun with lettuce from our CSA recently, so a big salad seemed like a good start. The green container holds toppings for the salad - organic baby carrots, radishes from our CSA, fresh snap peas from the CSA, strips of yellow bell pepper, and in the little muffin tin are peanuts and craisins (a new salad addiction for me!). The smaller blue container holds organic blackberries - yum! The smaller red container holds a cut up spicy Chik'n Boca patty, and the larger blue container holds a whole wheat bun with some sliced sweet pickles in the orange container. I have salad dressing and mustard tucked into the salad container. Last, but not least, there is a separate container with organic grapes and cherries for a mid-morning snack. (I've found that with working 10-11 hour days, it helps to have extra snacks on hand!)

CSA - weeks 2 and 3

So we're still getting huge amounts of salad mix in our weekly farm delivery. We're also getting a variety of radishes and greens (turnip, radish, beet, etc.). This week we also got mint and arugula. But by far my favorite addition is sugar snap peas. They are delivered still in the pod, and it's a lot of fun to peel them open! The flavor is great - I'm going to have a hard time eating frozen peas after this! We have had them raw in salads, cooked in a pasta dish, and my favorite - boiled for 30 seconds and eaten with a small amount of butter. Check out your local farmers market and purchase some for yourself - they're yummers! =)
